For this, we first return to the &#8220;roots&#8221; of our ancestors, using plenty of fermentation, pickling, and preserves in our kitchen. We carefully ensure that we get the most out of the ingredients that reach us. When you visit us, you can choose between two tasting menus. The first is &#8220;Local Journey,&#8221; where we use only Estonian ingredients, and the second is &#8220;Baltic Sea Journey,&#8221; where, depending on the season, we may use ingredients that grow in or around the Baltic Sea.
